Whew...what an eventful 24 hours we've had in San Antonio. The weather forecasters predicted a dusting of snow overnight, but we've heard that before and then had our hopes dashed in the end. But not this time...Mother Nature surprised us with some snow AND ice last night. This is a very rare occurrence in Texas, so to say we're not equipped to deal with it is an understatement. The roadways in the entire county were shut down from midnight until noon, so we received another very rare happening: a snow day from work!
Exactly how much snow does it take to shut down this city? Not much, especially when there's a layer of ice underneath. Here's what the parking lot of my apartment complex looked like when I woke up this morning...sort of like a coating of powdered sugar:

I'm a big fan of Green Giant frozen veggies, and their broccoli and cheese sauce happens to be one of my favorite varieties! Although it makes a tasty side on its own, I love to use it to top a baked potato topping for a quick and simple lunch or dinner. I simply microwave a baked potato and pour the cheesy broccoli on top. You can't ask for more than that: something that's yummy, quick to make, and full of healthy fiber to boot.

I have recently found that if i do a quick stiryfry with fresh broccoli, geen onions and red bell peppers with just a touch of sesame oil, soy sauce and ginger eveyone will eat it but Levi! It's good for you, quick and delish!

So true! Austin SHUT DOWN today. I couldn't believe how ill-equipped we are for weather like this...when we had snow like this in Colorado...we considered it a good day! ReplyDeleteMy absolute favorite veggie is Asparagus. I love to drizzle with olive oil, sprinkle on some kosher course salt and grate some fresh lemon zest and then pop in the over for an hour at 275 degrees. This slow roast them to perfection.

Our favorite veggie is my Indian Corn Casserole ... it's a family fav since I was a kid and my mom made it for us. A delish combo of beaten eggs, grated cheddar cheese, a tad of sugar, whole kernel corn and yummy bacon ... all this in a 9 x 13 Pyrex in the oven ... it's so good! Our family favorite: Broccoli Casserole
ReplyDelete1 package frozen broccoli
cooked according to directions
1 can cream of mushroom soup
1/2 lb velveeta cheese (cubed or slice)
1 package of stove top stuffing
Mix broccoli & soup in a 9x13pan
next layer with cheese
make stuffing according to directions, the add on top of cheese
Place in oven at 350 for 20 - 30
Everyone loves this dish! And it's broccoli!!!

My favorite veggie is asparagus, stir fried or roasted, and and placed over cooked pasta with lemon. We got 24" of snow in in Chicago Land.

so many veggies that I like - corn on the cob wrapped in foil with some lime juice and grilled is quite yummy. Asparagus quickly cooked over kosher salt is also another favorite.
