It's officially Fall, which means it's finally pumpkin spice latte season. But...what if you don't drink coffee? No problem...I've got you covered! Here's an easy recipe for a warm and creamy seasonal white chocolate cocoa. It's a perfect sip as the days turn cooler. My Pumpkin Pie Hot White Chocolate is like sipping a piece of pumpkin pie. It smells absolutely amazing as it simmers on the stove, and it's ready to enjoy in minutes! As an added bonus, I'm also providing easy ingredient substitutions to enjoy this decadent drink with less sugar and fewer carbs. These tweaks allow me to enjoy pumpkin spice flavors...in a healthier way!

Pumpkin Pie Hot White Chocolate

Ingredients (makes two servings):
  • 1 cup unsweetened vanilla almond OR cashew milk
  • 1/2 cup Pumpkin Spice creamer OR zero sugar pumpkin spice creamer
  • 1/2 cup good-quality white chocolate chips OR Lily's sugar free white chocolate chips 
  • 1 tsp. vanilla bean paste OR pure vanilla extract
  • 1/2 tsp. pumpkin pie spice
  • 1/2 cup canned pumpkin puree -- not pumpkin pie filling
  • Optional Garnish: marshmallows and more pumpkin pie spice
            Directions:
            Step 1: Add the almond or cashew milk, creamer, and white chocolate chips to a medium non-stick saucepan over Medium heat. Whisk ingredients over heat until the white chocolate chips melt and completely incorporate into the liquid. This should take about 5 minutes. 
            Step 2: Whisk in the pumpkin pie spice and vanilla bean paste/extract. Finally, whisk in the pumpkin puree until it's completely incorporated with the liquid ingredients.

            Step 3: Pour the hot white chocolate into two mugs -- small clear mason jars are a nice way to show off the beverage's gorgeous light orange color! Just before serving, feel free to top each mug with a large marshmallow...and sprinkle a bit more pumpkin spice on top.
            October might be pumpkin spice latte season...but my Pumpkin Pie Hot White Chocolate is definitely a show stopper too! It's perfect paired with a toasted bagel or English muffin for a light breakfast. It also makes an excellent drink to savor while relaxing on the couch watching TV. No matter when you serve it, this beverage is warm and comforting...and full of classic pumpkin pie flavors!
