My Cilantro-Lime Shrimp Taco Salad is an ideal dinner for warm Summer evenings! It's quick to make, and it doesn't heat up my kitchen. This entree salad also features multiple layers of flavors and textures. It's exactly how I like to cook during the long, HOT Texas Summer.

Cilantro-Lime Shrimp Taco Salad

Ingredients (makes 3 entree salads):

For the shrimp:
  • 1 lb. Fulton Fish Market Wild Colossal Blue Easy-Peel Shrimp
  • 2 TBS taco seasoning [NOTE: I use Mateo's Medium Ancho Chile Taco Seasoning]
  • 1/2 tsp. salt
  • Juice from half of a lime
  • 1 TBS olive oil
For the pickled onions:
  • 3/4 cup thinly sliced red onion
  • 1/4 cup white vinegar
  • 1/4 cup water
  • 1 tsp. salt
  • 1 tsp. sugar OR 1 packet sugar-free sweetener
For the cilantro-lime dressing:
  • 3/4 cup ranch dressing [NOTE: I use Bolthouse Farms Classic Ranch]
  • 1/4 cup fat-free plain Greek yogurt
  • Juice from half of a lime
  • 1/4 cup salsa verde [NOTE: I use Herdez Mild Salsa Verde]
  • 1/4 cup fresh cilantro
For the salad base:
  • 4 cups shredded lettuce
  • 1 medium avocado, diced
  • 1 large tomato, diced
  • 1 cup crumbled queso fresco [NOTE: can substitute crumbled mild feta]
  • 3/4 cup tri-color tortilla strips
Directions:
Step 1: Up to 24 hours ahead -- but at least 6 hours before serving -- make the pickled onions. Place the sliced red onion in a small bowl. Add vinegar, water, sugar/sweetener, and salt to a small saucepan. Stir to combine and bring to a simmer over Med-Low heat. Pour warm vinegar mixture over the sliced onions. Stir to combine, and let onions come to room temperature. Cover and refrigerate until it's time to assemble the salads.
Step 2: Make the cilantro-lime dressing. Add the ranch dressing, yogurt, lime juice, salsa, and cilantro to a blender cup. Blend until the cilantro is completely incorporated -- about 30 seconds. If necessary, shake the blender cup and blend an additional 10 seconds to ensure ingredients are completely incorporated. Pour dressing into a covered container and chill until it's time to assemble the salads.
Step 3: Season and sear the shrimp. Add shrimp, taco seasoning, salt, and lime juice to a small bowl. Stir thoroughly to combine; set aside while you heat a non-stick skillet over Med-High heat. Add olive oil to skillet, and heat for 2-3 minutes. Add shrimp to skillet and sear for 2 minutes. Flip and sear shrimp 2 more minutes.
Step 4: Assemble the salads. Place one third of the shredded lettuce onto each plate. Evenly add the seared shrimp to each salad. Arrange one third of the pickled onions, avocado, tomato, queso fresco, and tortilla strips on each salad. Finally, add a small container of the cilantro-lime dressing to the center of each salad just before serving.
