I'm always on the lookout for Lenten Friday recipes that help me create tasty and quick seafood meals. At the end of a busy week, nobody wants to spend hours cooking dinner! My family-friendly Tilapia Wrap Sandwiches with Feta-Avocado Slaw are bursting with fun flavors and textures. Convenient frozen tilapia fish sticks and a quick homemade slaw flavored with feta and creamy avocado are rolled inside soft flatbreads. All you have to do is add a quick side dish or two...and dinner is ready in about 30 minutes!
Tilapia Wrap Sandwiches with Feta-Avocado Slaw

Ingredients: (makes 3 large sandwiches):
- 12 frozen tilapia fish sticks (I use Gorton's Premium Tilapia Fish Sticks)
- Creole seasoning (I use Tony Chachere's)
- 3 rectangular lavash soft flatbreads
For the slaw:
- 3 cups bagged tri-color slaw mix
- 3 green onions, thinly sliced
- 3/4 cup crumbled feta cheese
- 1 small avocado, pitted and diced
- Juice of 1 lemon + 1/4 cup milk
- 1/2 cup fat free plain Greek yogurt
- 1 TBS Creole seasoning
Directions:
Step 1: Make the slaw. Add the slaw mix, green onion, feta, and avocado to a large mixing bowl. Combine lemon juice, milk, Greek yogurt, and Creole seasoning in a small bowl with a whisk until a dressing is formed. Pour dressing over the slaw ingredients and stir until everything is combined and evenly coated with dressing. Be gentle so you don't break up the avocado. Set slaw aside in the fridge until you're ready to assemble the wraps.
Step 2: Evenly sprinkle the fish sticks with a generous amount of Creole seasoning. Bake fish sticks according to package directions until they are crispy and golden brown.
Step 3: Assemble the sandwiches. Place a soft lavash bread on your work surface. Add one-third of the slaw to the top of the lavash and spread it out, leaving a 1-inch border all the way around. Lay four cooked fish sticks 2x2 on one end of the lavash, about 1 inch in from the border. Turn the lavash so it is vertical, with the fish sticks at the bottom. Carefully roll the sandwich up tightly, away from you. Use a serrated knife to cut it on the diagonal.
Wowza! This healthy wrap sandwich has it all! Soft lavash, crunchy slaw, creamy avocado, salty feta, a bit of spice from the Creole seasoning...and a generous amount of crispy mild fish. This wrap sandwich is flavorful and filling -- a complete meal the whole family will enjoy. We also enjoy this wrap with medium fried ship in place of fish.
No matter what seafood you use, this sandwich is a keeper all year long! Chips and fresh fruit are quick sides to add...but we especially enjoy oven fries.
