I love to cook! But some nights? I need to get in and out of the kitchen with as little fuss...and mess...as possible. Enter sheet pan dinners, which cook an entire meal using ONE pan! They're a perfect solution to save time and streamline kitchen cleanup! Greek Chicken with Zucchini, Tomatoes, and Mushrooms features in-season veggies and Mediterranean spices with chicken breast to create a delicious one-pan dinner. This dish literally takes 10 minutes to prep, then roasts in the oven for about 30 minutes. That gives you a pocket of time to whip up a quick side dish. Life can be hectic...but dinner doesn't have to be!
Greek Chicken with Zucchini, Tomatoes, and Mushrooms
adapted from 200 Best Sheet Pan Meals
Ingredients (makes 4 servings):
- 2 garlic cloves, finely chopped
- 2 tsp. Greek splice blend (NOTE: I use McCormick Global Flavor Greek Seasoning)
- 1 TBS + 1 tsp. olive oil
- 3/4 tsp. salt + 1/2 tsp. black pepper
- 2 lbs. boneless, skinless chicken breasts, cut into 2-inch chunks
- 2 cups chopped zucchini -- I slice and cut slices in half
- 2 cups cremini mushrooms, halved
- 2 cups grape tomatoes
- 1 shallot, peeled and coarsely chopped
- 1/3 cup crumbled good quality feta cheese
Directions:
Step 1: Preheat oven to 400℉. Line an 18x13 rimmed baking sheet with aluminum foil. Spray foil with non-stick spray and set aside. In a large mixing bowl, whisk together the olive oil, salt & pepper, and Greek seasoning. Add the chicken pieces, zucchini, mushrooms, tomatoes, and shallot. Stir well to evenly coat every piece with the seasoned olive oil.
NOTE: When prepping the chicken and vegetables, be sure to cut them all the same size to ensure even cooking.
Step 2: Spread ingredients evenly in a single layer on the prepared baking sheet. Roast for 25-30 minutes, until the tomatoes are starting to burst and the zucchini is tender. To ensure even cooking, rotate the baking sheet halfway through the cooking time. Remove the sheet pan from the oven and sprinkle the feta cheese evenly on top. Serve immediately.
