I used diced Just Meats Smoked Texas Brisket to create a delicious Streamlined Brisket Queso for my family to enjoy while we watched this week's Houston Texans football game. The smoked brisket saved me a ton of prep time, so I was able to spend more time cheering instead of cooking. That's a win! This queso is a snap to make. It has just FIVE ingredients...and a few flavorings you likely already have in your kitchen.

Streamlined Brisket Queso
Inspired by H-E-B Meal Simple Queso
Ingredients (makes four generous servings):
- 1 package Just Meats Smoked Texas Brisket, heated and diced into small pieces
- 1.5 cups shredded Colby Jack cheese
- 1 cup shredded Velveeta
- 1 cup fresh pico de gallo
- 1.5 cups half and half OR heavy cream
- Juice from half a large lime
- 1/2 TBS chili powder
Directions:
Preheat oven to 400℉. Reserve 1/2 cup of pico de gallo and 1 cup of the chopped Just Meats Smoked Texas Brisket for garnish.
Add the cheeses -- along with the remaining chopped brisket and pico de gallo -- in vertical rows in a rectangular baking pan. I use an aluminum foil pan for easy cleanup. Pour the half and half or heavy cream evenly over the ingredients in the baking pan. Add the lime juice and chili powder, then give everything a stir to completely combine.
Bake the queso for 20 minutes, stirring every 5 minutes. The queso should be completely melted and bubbling around the edges when done. Spoon the finished queso into individual serving bowls. Top with equal amounts of the reserved pico de gallo and chopped brisket.
Serve this versatile queso with plenty of sturdy tortilla chips for dipping. It's also great spooned into warm flour tortillas and rolled up. So good!!
