Halloween Fun Week: Featuring Boo-Rific Corn Dog Cups with Green Goo Dipping Sauce #halloweenfun #spookyfood #kidfriendlyhalloween #funwithfood

Halloween is coming up in a few days! Why not whip up a SPOOKY family-friendly dinner before trick-or-treating...or at-home scary movie fest. I can't wait to show you how quick and easy it is to create my seasonal Boo-rific Corn Dog Cups with Green Goo Dipping Sauce. It's also a fun project to have your kids help assemble! Frozen corn dogs are embellished with and presented in seasonal Halloween decor. To up the spooky theme, the corn dogs are served with a vibrant green dipping sauce flavored with avocado, cilantro, and ranch. Family fun and yummy food is truly what life's all about! My step-by-step tutorial will show you exactly how easy this project is to achieve. 

Boo-rific Corn Dog Cups 
with Green Goo Dipping Sauce

Ingredients (makes 6-8 servings):
  • 6-8 frozen corn dogs
For the dipping sauce:
  • 1 cup reduced-fat mayonnaise
  • 1/2 cup fat-free plain Greek yogurt
  • 1 TBS ranch dressing mix
  • ½ cup green tomatillo salsa
  • 1 small avocado, pitted and cut into chunks
  • ¼ cup fresh cilantro leaves, finely chopped
  • 2 green onions, thinly sliced
  • Juice of one small lime
  • 3-4 drops green food color
For the decor:
  • Halloween-themed cups
  • Floral foam
  • Black and orange paper confetti
  • Plastic/rubber bloodshot eye decor
  • Halloween-themed toothpick banners
Directions:
Step 1: Bake the corn dogs according to package directions. While the corn dogs bake, make the dipping sauce. Add the mayonnaise, Greek yogurt, ranch dressing mix, salsa verde, avocado, cilantro, green onion, lime juice, and green food color to a blender container. Blend until all ingredients are incorporated into a smooth dipping sauce. Spoon into a Halloween-themed container -- I used a small tin Halloween bucket.
Step 2: Place floral foam in the bottom of two Halloween themed cups. Firmly push the cooked corn dogs sticks into the floral foam to form a cluster -- three or four corn dogs per cup. Carefully arrange the paper confetti inside the cup around the corn dogs, making sure to completely cover the floral foam so it doesn’t show. 

Next, insert the Halloween pick decor into the top of each cooked corn dog. Finally, place a plastic/rubber bloodshot eye in the center of the green goo dipping sauce. Serve the corn dog cups with the container of dipping sauce on the side.
This is a festive, flexible Halloween-themed meal. The key is to have fun and use whatever decorations appeal to you! I especially love it when something easy to whip up has so much flavor impact and eye appeal. Crispy baked corn dogs are a perfect match for the vibrant green, mildly spicy dipping sauce.
